Project Pepsin: Enzyme


During the holiday seasons, people across the United States indulge themselves in holiday foods; fried chicken, mashed potatoes, ham, cakes, cookies, ice cream, egg nog, turkey, stuffing, and in Snooki's case, fried pickles. In order to help break down this heap of food, the enzyme pepsin is on the scene. Pepsin is the first in a series of enzymes that digest proteins. In the stomach, protein chains bind in the deep active site groove of pepsin, seen in the upper illustration and are broken into smaller pieces. The food is broken down into energy for cells to use as metabolic fuel or construction of new proteins.

I chose this enzyme because of it's unique stucture and ability to break down foods. It is important to us in the sense that the honey ham you ate last Christmas won't completely go to your thighs. In other words, it helps to speed up and simplify the digestion process so that you won't be putting on extra weight.
